When I say this jalapeño cauliflower mash tastes like comfort food without the crash, I mean it. Think all the cozy, creamy vibes of mashed potatoes, but lighter, fluffier and packed with fiber and anti-inflammatory goodness. It's the kind of side dish you can pair with literally anything. Roasted chicken, salmon, slow-cooked beef, or my husband's personal favorite, with meatloaf.
The jalapeño adds a warm, gentle heat that wakes everything up—not too spicy, just the right amount of kick. And if spice isn't your thing? No worries. Simply leave out the jalapeño entirely and you'll still have a silky, flavorful mash that tastes luxe and comforting on its own.
Why you'll love it
Creamy and comforting without being heavy
Completley gluten-free, dairy-free, and anti-inflammatory
High in fiber (hello, gut + hormone support)
A cozy side dish you'll want to make on repeat
Takes less than 20 minutes

Ingredients:
-1 large head of cauliflower, chopped into florets
-1 whole jalapeño
-1/4 cup almond milk (can be substituted for heavy cream)
-2 tbs butter
-S&P to taste
Directions:
Steam the florets until very soft, think fork tender.
Add cauliflower, jalapeño, almond milk, butter, and salt, and pepper to a blender or food processor.
Blend until ultra creamy. Taste and adjust S&P as needed.
Serve immediately topped with herbs, and extra butter if you're feeling it.
Make it protein boosted:
Add 1 scoop unflavored collagen peptides (you won't taste it!)
This jalapeño cauliflower mash lasts in the fridge up to 4 days and is one of those recipes that quietly becomes a staple. It gives you all the creamy comfort of classic mashed potatoes, but without the heaviness — just nourishing flavor, gentle spice, and a texture that feels silky and wholesome. It’s the kind of side that makes your plate feel cozy and intentional, whether you’re healing your gut, supporting your skin, or just craving something comforting that still makes you feel good after. One bite, and you won’t miss the potatoes — I promise.
