Spicy Mango Corn Salsa

This simple little bowl of sunshine is everything I crave when the weather starts to warm up—sweet, spicy, juicy, and bursting with flavor. This spicy mango pico is my go-to for turning any meal into a party.
Whether you’re scooping it with chips, spooning it over fish tacos, or eating it straight from the bowl (zero judgment), this salsa is here to brighten up your plate and your tastebuds. This is one of those quick, no cook, and endlessly customizable recipes. The combo of mango, jalapeno, and lime is pure magic!
Ingredients:
1-2 ripe mangos, diced small
¼ red onion, finely chopped
1 small jalapeño, finely minced
1 small serrano, finely minced
1 ½ cups fire roasted corn
Juice of 1-2 limes
½ cup fresh chopped cilantro
Pinch of sea salt
Instructions:
Combine all ingredients in a bowl
Toss gently and taste—adjust salt, lime, or heat as needed
Let chill in the fridge for 10-15 minutes to let the flavors all come together
Serve with chips, tacos, or on top of salads
