Hot Honey Parmesan Sweet Potatoes

These Parmesan Hot Honey Sweet Potatoes are the kind of side dish that accidentally steals the spotlight — simple enough for a weeknight dinner, but good enough to bring to a dinner party.


This recipe checks every box: high-fiber carbs, healthy fats, a little protein from the parmesan, and tons of flavor without needing anything complicated. Roasted face-down on a layer of parmesan until perfectly crisp, these sweet potatoes come out caramelized on the inside with an irresistible salty crunch on the outside. Finished with a drizzle of hot honey, they hit every flavor note: sweet, savory, spicy, and ridiculously addicting.


Ingredients:

  • 2 large sweet potatoes, washed and sliced in half

  • 2-3 TBS avocado or olive oil

  • 1/2 cup grated parmesan

  • S&P to taste

  • 2-3 TBS hot honey


*Brighten Tip: No hot honey? No problem. Make your own by mixing honey with red pepper flakes and a pinch of cayenne pepper for the perfect sweet and spicy drizzle.


Directions:

  1. Preheat your oven to 425 degrees and line a baking sheet with parchment paper.

  2. Spread the parmesan into an even layer directly onto the parchment paper. Place the sweet potatoes cut-side down, pressing each one gently into the parmesan.

  3. Drizzle with oil and season generously with salt and pepper

  4. Roast for 30-35 minutes, or until the sweet potatoes are tender and the parmesan is crispy, golden, and lacy around the edges.

  5. Remove from the oven and let everything rest for about 5 minutes so the parmesan can crisp up and set.

  6. C arefully flip the sweet potatoes over and drizzle generously with hot honey while still warm.

  7. Serve immediately and enjoy every crispy, cheesy bite.
