Spicy Shrimp Lettuce Cups w/Mango Salsa

If you are looking for a meal that feels light but deeply satisfying, these spicy shrimp lettuce cups are it! Juicy shrimp coated in a creamy, spicy yogurt sauce, on top of crisp lettuce, and topped with a vibrant mango salsa that brings the perfect pop of sweetness.


And the best part? It comes together in under 30 minutes, aka ideal or those busy weeknights after work.

Ingredients:

  • 1lb shrimp, peeled and deveined

  • 1/2 cup dairy free yogurt (cocojune is my fave)

  • 1 tbsp lime juice

  • 2-3 tbsp of taco seasoning (I use Siete spicy taco seasoning)

  • 1 tsp chili powder

  • 1/2 tsp garlic powder

  • S&P to taste

  • 1 head of butter lettuce

  • Mango Salsa (Recipe found on my blog)


Directions:

  1. Make the Mango Salsa and let it hang out while you make the shrimp. This step matters! The longer it sits, the better it gets and the flavors will fully develop.

  2. Lay shrimp in a single layer and pat dry. This will allow the seasonings to stick to the shrimp and give it a nice flavor (Don't skip this, it's the difference between good and delicious). Season your shrimp with garlic powder, chili powder, salt and pepper.

  3. Heat a pan over medium heat and cook the shrimp for 2-3 minutes per side, until opaque and slightly caramelized.

  4. While the shrimp cook, in a small bowl whisk together yogurt, taco seasoning, and lime juice until smooth and creamy.

  5. Once shrimp are fully cooked, remove them from the pan and toss in the yogurt sauce until well coated.

  6. Lay out your lettuce leaves and add a few shrimp to each, top with a generous scoop of mango salsa, don't be shy here! Add avocado, extra cilantro, and finish with a squeeze of lime!


Tips for the best flavor

  • Use ripe mango, but not overly ripe where its mushy. It should be slightly soft and super fragrant

  • Don't overcook the shrimp! They cook fast

  • Let the salsa sit–even 10 minutes makes a huge difference in flavor development
