Marry Me Brothy Beans

Inspired by those rich, creamy “Marry Me” flavors, these brothy beans lighten things up with a golden, nourishing twist—spicy sausage, sun-dried tomatoes, and tender kale simmered into a cozy, flavor-packed bowl that feels as good as it tastes. These brothy beans are rich, savory, and deeply comforting.
And the best part? You're getting a solid balance of both protein and fiber, the combo we're always chasing but rarely hitting in one bowl. This bowl feels indulgent, but quietly supports your gut, blood sugar, and overall glow.
Ingredients
1 tbsp olive oil
1lb ground spicy Italian sausage
2-3 cloves of garlic
1/2 yellow onion, diced
1/3 cup sun-dried tomatoes, chopped
1 can of cannelli beans, drained and rinsed
1 can of butter beans, drained and rinsed
2-3 cups of bone broth (depending on how brothy you like it)
1/4 cup cream
2 cups of kale, stems removed and chopped
S&P to taste
1 tsp red pepper flakes
a few sprigs of fresh thyme
1/4 cup fresh grated parm
Directions
Heat olive oil in a large pot over medium heat. Add sausage and break it up, cooking until browned and slightly crispy. This is where a lot of the flavor builds!
Add garlic and onion and cook until fragrant. Toss in sun-dried tomatoes and stir, letting everything cook together for 1-2 minutes.
Pour in both cans of beans and add your broth. Stir everything together, scraping any browned bits from the bottom of the pan and bring to a gentle simmer.
Stir in the kale and let it wilt before adding your cream, fresh thyme, parmesan, and seasonings. Stir and let simmer for 10-15 minutes so the flavors can deepen and the broth slightly thickens.
Serve with toasted sourdough and enjoy!
