Creamy Potato Chicken & Leek Soup

Let's be honest, it's always soup season at my house. If you're in a season of healing, whether it's your gut, skin, or just your energy. This is one of those soups that feel like a cozy reset. Simple, nutrient dense, and easy to digest. It’s creamy without feeling heavy, packed with protein from the chicken, and balanced with soft potatoes and sweet, caramelized leeks that melt into the broth.

Leeks are underrated for gut health—they’re rich in prebiotic fiber, which helps support a healthy microbiome. Pairing them with protein and easy-to-digest carbs (like potatoes) makes this a balanced, healing meal that won’t spike and crash your energy.


Ingredients:

  • 2 tbsp olive oil or ghee

  • 2 leeks, sliced (white + light green parts, cleaned well)

  • 2-3 cloves garlic, minced

  • 1/2 yellow onion, diced

  • 2 carrots, peeled and chopped

  • 2 celery stalks, chopped

  • 1 tbsp arrow root

  • 2-3 cups shredded rotisserie chicken

  • 3-4 medium Yukon gold potatoes, thinly sliced into rounds

  • 32oz of chicken bone broth

  • 1/2 cup unsweetened coconut milk or cream (depending on your preference)

  • 1 tbsp fresh thyme (or 1/2 tsp dried)

  • salt and pepper to taste

  • Optional: Chopped spinach or kale for extra greens


Directions:

  1. In a dutch oven, or large soup pot heat ghee over medium heat. Add the leeks, carrot, onion, and celery. Cook for 5-7 minutes, stirring occassionaly, until soft and slightly carmelized. Add the garlic and cook for another 30 seconds.

  2. Stir in thyme and arrow root, coating all the veggies (this helps naturally thicken the soup). Pour in bone broth and add the shredded chicken. Cover and bring to a gentle boil.

  3. Once boiling add in sliced potatoes and let them cook until fork tender.

  4. Stir in the cream, letting everything come together into a rich, velvety broth,

  5. Season with salt and pepper and taste to adjust.

  6. Ladle into a bowl and top with fresh herbs, and serve with a side of sourdough!
