This gluten-free chicken pot pie brings all the cozy, nostalgic flavors you love, but with ingredients that support your wellness goals. Tender chicken, hearty veggies, a silky sauce, and the best part—a golden, flaky gluten free crust that tastes just as good as the traditional version.


This recipe was created with nourishment in mind: high protien, gut happy, and anti-inflammatory swaps that soothe rather than stress your body. This meal will feel like a hug after a long day and make your kitchen smell absoloutley dreamy.

Ingredients:

For the filling:

  • 2 cups shredded chicken (I use organic rotisserie from Whole Foods)

  • 2 celery stalks, chopped

  • 1 large carrot, chopped

  • 1/2 a yellow onion, diced

  • 1-2 yellow potatoes, peeled and cubed

  • 2 cloves of garlic, minced

  • 2 cups of chicken bone broth

  • 1/2 teaspoon poultry seasoning

  • 1 teaspoon everything but the leftovers seasoning (from Trader Joes) https://www.traderjoes.com/home/products/pdp/everything-but-the-leftovers-seasoning-blend-069241

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon cayenne

  • 1 TBS arrow root

  • S&P to taste

  • 1 pad of butter

  • A few sprigs of fresh thyme

  • 1/4 cup of half and half (can be subsitiuted for coconut or almond milk)


For the crust:


Directions:

  1. In a large pan sauté your onions, carrots, celery, and garlic in butter until soft and fragrant, add cubed potatoes and s&p to taste.

  2. Add arrow root and stir until dissolved. Once dissolved add your bone broth and shredded chicken.

  3. Stir well and add seasoning blend, fresh thyme, and cream. Bring to a boil and stir until flavors are combined.

  4. Pour filling into your pie crust and top with puff pastry. Cut puff pastry to fit and seal edges using a fork.

  5. Cut a few slits on top for ventilation and brush the top with egg wash to create that golden brown top.

  6. Bake at 350 degrees for 25-30 minutes to let the crust get golden and bubbly. Your kitchen will smell unbelievable.

  7. Once fully baked let your pie settle for 5-10 minutes before cutting and serving.


Tips for the best gluten-free pot pie

  • Use high quality gluten-free crust, my personal favorite is the Wholly gluten-free brand for the best flaky texture.

  • Opt for bone broth over regular broth for deeper flavor and gut support

  • Swap chicken for leftover turkey after the holidays

  • Use fresh herbs for deeper flavor

  • Add peas or any extra veggies you enjoy! Just make sure to add extra bone broth or cream because the ingredients tend to soak up the sauce
