Directions:
In a small saucepan, mash the bananas until mostly smooth, then drizzle in the honey. Stir in the coconut sugar and cook over medium-low heat, stirring often, until the mixture comes together and turns thick and glossy.
Add in water and continue stirring as the mixture heats. Bring to a gentle boil, then reduce heat and let it simmer for about 10-15 minutes, stirring occasionally so nothing sticks.
Remove from heat and allow syrup to cool completely.
Once cooled, stir in cinnamon and vanilla bean paste.
Strain the syrup through a fine mesh strainer, pressing the bananas to get every last drop of syrupy goodness.
