Salted Brown Butter Syrup

If you have been to Caffe Paradiso in NYC you know they are famous for their salted brown butter oat latte on draft— and yes, it is to DIE for and worth every bit of hype it has recieved. It's rich, slightly nutty, and somehow perfectly balanced without being overly sweet. One sip and you get it.
After dreaming about this drink since my last trip to New York, I knew I needed a way to recreate that flavor at home. This homemade version delivers a refined sugar-free approach that still hits the indulgent flavor.
Why Brown Butter:
Brown butter is magic! Gently cooking butter until the milk solids toast brings out that deep, nutty, almost caramel like flavor that instantly makes everything feel elevated.
Ingredients:
3 tbs grass fed butter
1/2 cup coconut sugar
1/2 cup water
Generous pinch of Maldon flaky sea salt
1/2 -1 tbs vanilla bean paste
Directions:
In a small saucepan, melt butter over medium-low heat. Stir continously as it cooks, allowing the butter to brown. You will know it's ready when it. smells nutty and small brown flecks form at the bottom of the pan.
Once browned, carfully stir in coconut sugar and water. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 10 minutes to deepen the flavor.
Remove from heat and allow the syrup to cool completely.
Once cooled, strain through a fine mesh strainer to remove any solids.
Stir in the vanilla bean paste and sea salt.
Store and enjoy in your morning coffee for up to two weeks—if it lasts that long!
