The Best Quiche

There is something about pulling a golden, perfectly set quiche out of the oven that feels, put together. Like suddenly you went from having the egg ick to hosting brunch Martha Stewart style.
But heres the truth: this quiche isnt about being fancy. It's about feeling nourished. This quiche is gluten free, high protein, and packed with delicious ingredients to start your morning balanced and support your hormones.
Whether you are hosting a brunch, or just simply trying to stop skipping breakfast, this recipe is gentle place to start.

Ingredients:
6 large eggs
1/2 a white onion diced
1-2 cups spinach
1/4 cup marinated artichokes chopped
1 pack of bacon
Pinch of sea salt and pepper
Splash of cream
1/2-1 cup of shredded goat milk cheddar
Gluten-free pie crust
Directions:
Preheat oven to 350 degrees
Cook your bacon in a skillet over medium heat until crispy. Remove from the pan, set aside, and chop into bite-sized pieces.
In same pan using the bacon drippings, cook the onion until fragrant and translucent. Then add the artichokes, chopped bacon, and spinach. Sauté until the spinach is wilted and everything is combined.
Spread this filling evenly into the prepared pie crust and sprinkle a layer of shredded cheese over the top.
In a bowl whisk together eggs, cream, salt, and pepper until smooth.
Pour egg mixture over the filling and top with the remaining shredded cheese.
Bake for 25-30 minutes, until center is set and top is lightly golden.
Let cool for 10 minutes before slicing and enjoy
