Better than Starbucks Egg Bites

The easiest make-ahead breakfast that actually keeps you full & you can customize them a million ways.



Skipping breakfast just isn't an option for me even when my mornings sometimes feel rushed. These egg bites have been one of my go-to meal prep staples for as long as I can remember! They're simple, packed with protein, and dare I say they are so much better than Starbucks.


The best part is how customizable they are. You can mix and match whatever you have in your fridge and never get tired of them. My take is to always include a meat for an extra boost of protein and load them up with veggies for added fiber and flavor, the combinations are endless!


Ingredients:

  • 8-10 eggs

  • 1/4 cup onion, finley diced

  • 1/4 cup sun-dried tomatoes, chopped

  • 1 cup fresh spinach, chopped

  • 1 pack of bacon

  • S&P to taste

  • 1 TBS almond milk

    *You can also add cheese if you tolerate dairy for an extra protein boost!


Directions:

  1. Preheat your oven to350 degrees.

  2. Cook your bacon to your liking and chop into small pieces. Dice the onion, chop the spinach and sun-dried tomatoes as well.

  3. In the same pan you cooked the bacon in, add your onion and sundried tomatoes and cook until fragrant. Then add your spinach and cook until fully wilted. Lastly, add your chopped bacon and mix everything together .

  4. In a large bowl, crack the eggs, add your almond milk and whisk until smooth. Season with salt, pepper, and any additional spices you like.

  5. Grease a muffin tin and evenly distribute this mixture into each cup. Pour the egg mixture over the top, filling each about 3/4 full.

  6. Bake at 350 degrees for 18-22 minutes, or until the egg bites are set and slightly golden brown on top.

  7. Let them cool for a few minutes before removing. Store in the fridge for up to 5 days.


How to reheat: Pop them into the microwave for 60 seconds or place in the oven at 325 for 10 minutes and enjoy!
