If you are anything like me, you know how important it is to keep your energy up with delicious, nourishing meals that don’t compromise on taste. Everyone loves a good sandwich, and I know it can be challenging to find a sandwich that not only fuels your body but also satisfies your cravings. Which is why I have created a Chuck Roast Sandwich that is the perfect blend of hearty, wholesome goodness that will brighten your day in every bite!
I am all about balancing flavor, nutrition, and wellness in my meals, and trust me when I say this sandwich checks all the boxes.
Why Chuck Roast?
First and foremost, let’s talk about why I love chuck roast. This cut of beef is not only packed with rich flavor, but it also has the right balance of protein and healthy fats. For all my wellness kings and queens, protein is a must! It helps with muscle recovery, boosts metabolism, and supports overall body functions. Plus, the slow cooked chuck roast retains moisture and tenderness making it a juicy addition to your sandwich. Another bonus point: chuck roast is often less expensive than other cuts of beef, making it an affordable yet nourishing option for those who want to eat well without breaking the bank.
Health-boosting ingredients:
Protein powerhouse: Chuck roast provides your body with high-quality protein essential for overall energy and blood sugar regulation
Loaded with greens: Fresh arugula not only adds a fiber source but adds a vitamin boost, supporting immune health and digestion
Healthy fats: The organic high quality olive oil used in the cilantro chimichurri
Ingredients:
Chuck Roast (grass-fed is ideal for a healthier cut however sometimes it is too lean and won’t render enough fat)
1 Garlic clove
S&P to taste
½ tsp garlic powder
½ tsp cayenne pepper
½ tsp onion powder
Focaccia bread (or bread of your choice)
Hot cherry chile peppers
My cilantro chimichurri (see recipe under sauces tab on blog)
Balsamic roasted red onions (see recipe on blog)
Arugula
Instructions:
Preheat oven to 325 degrees. Pat down your chuck roast so it is dry on both sides. Season roast generously making sure you press all the seasonings into the meat for maximum flavor. Add chuck roast into a Dutch oven, or ceramic baking dish, cover and place in the oven. Cook chuck roast 1 hour per pound of meat. For example, a 2 lb chuck roast will need to cook for 2 hours.
Once the meat is fork tender you can either shred the meat or chop it up and let it soak up all the juice and fat that was rendered. Bump your oven up to 425 degrees and let the meat get a nice crisp to it.
Assembling the sandwich
Slice your focaccia in half and lightly toast in the oven to your preferred level of crispiness. Once your bread is toasted rub a fresh garlic clove on both sides to add some flavor.
Spread cilantro chimichurri on one side of the bread generously—it’s so good you’ll want to load up on it
Load up that same side with your chuck roast and balsamic red onions
On the other side of bread add arugula dressed in olive oil and s&p, and your hot cherry peppers
Put your sandwich together, slice, and enjoy!
