Balsamic & Thyme Roasted Red Onions

These balsamic roasted red onions are the perfect addition to any salad, side dish, or sandwich. They are tender, tangy, and sweet while also being easy to prepare, packed with nutrients and bursting with flavor.
Onions often get a bad rep, and even I have steered clear of onions in the past because of their bold, sometimes overpowering flavor. Until I realized the health benefits red onions can have. Red onions are rich in antioxidants and have anti-inflammatory and immune boosting properties. They are also high in fiber, and full of essential vitamins like Vitamin C and potassium. And as a bonus they also contain anthocyanins, the antioxidants responsible for a red onions deep red color, which can also help reduce oxidative stress in the body. Food that tastes good and decreases stress within the body? I call that a win win.
When roasted, onions develop a sweet and savory depth of flavor that’s simply irresistible. When combined with balsamic vinegar and fresh herbs the result is a beautifully balanced outcome with a touch of acidity and natural sweetness.
Ingredients:
1 large red onion
2 Tbsp of balsamic vinegar
2 tbs olive oil
1 tbsp fresh or dried thyme
1 tsp sea salt
½ tsp ground black pepper
Instructions:
Preheat your oven to 400 degrees. This will allow your onions to roast to perfection and become soft and caramelized on the inside with a bit of crispy char on the outside
Peel and cut the red onion into strips, these can be cut to your preferred thickness. However, the thicker the strips the better they hold up during roasting
In a large mixing bowl combine onions, olive oil, balsamic vinegar, thyme, salt, and pepper. Toss everything together to ensure they’re evenly coated with the marinade
Spread the seasoned onions on a baking sheet in a single layer. Make sure they aren’t overcrowded, as this will allow them to roast evenly and develop the caramelized exterior. Roast for 20-25 minutes, checking them until they’re tender and golden brown.
Remove the onions from the oven and let them cool slightly before serving. You can enjoy them right away or store them in an airtight container in the fridge for up to 3 days. They are also great when reheated!
