My take uses ginger, tumeric, and garlic to create a calming immune supportive bowl thats perefect for recovery days or when your body needs something gentle. Ingredients:

  • Jasmine rice (I like the Lundberg brand)

  • 32-64 oz chicken bone broth (I prefer kettle and fire) you can also cut this with regualr chicken broth

  • 3-4 cloves minced garlic

  • 1-2 knobs of peeled ginger, cut into matchsticks

  • 2 tsp ground turmeric

  • Shredded rotisserie chicken

  • 1/4 cup diced yellow onion

  • 2 carrots, peeled and diced

  • 2 stalks of celery diced

  • 1 1/2 cups chopped baby bok choy

  • 3 thai chili peppers diced (optional for some spice)

  • S&P to taste

  • 2 Tbs olive oil

  • 1-2 Tbs Ghee


Directions:

  1. In a large pot melt the ghee over medium heat. Add the carrots, celery, and onion and saute until softened and fragrant.

  2. Stir in minced garlic, ginger, turmeric, thai chlili peppers, salt, and pepper, cooking just until aromatic.

  3. Pour in bone broth and add the rotisserie chicken. Stir well and bring the mixture to a gentle boil.

  4. Once boiling, add the chopped baby bok choy and stir to combine. Reduce heat and let the soup simmer for 10-15 minutes, allowing the flavors to deepen and come together,

  5. While the soup simmers, prepare the your rice acording to package directions. If you are short on time, a microwavable rice option works perfectly.

  6. Taste the broth and adjust seasoning as needed.

  7. To serce, add 1/2 cup-1 cup cooked rice to a bowl and ladle the warm, brothy mixture over the top. Finish with chopped green onions and enjoy!
