Dubai Dates



As a pistachio lover, when Dubai chocolate hit the scene I just knew I had to try it. But of course I had to make my own versiona little more nourishing, just as indulgent, and super simple to recreate at home. These pistachio filled "dubai dates" blew my mind when I first tried them, truthfully I didn't expect them to be so good. These dates are sweet, salty, crunchy, and the best part? Packed with good for you ingredients. Think of them as a wellness friendly version of a viral luxury treat! Just as satisfying but with no refined sugar, dairy, or glutenchefs kiss. These come together in 10 minutes, no baking required, and easily one of my favorite go-to sweet treats that I prep.


Ingredients:

  • Dates (pit free preferably)

  • Dark chocolate chips (I use the enjoy life foods brand-cleanest brand)

  • Crushed pistachios

  • Pistachio spread (I like the pistakio brand but any works)

  • 1 tbs of organic coconut oil


Instructions:

  1. Cut your dates in half, making sure to not cut all the way through fully

  2. Stuff the each date with a spoonful of the pistachio spread and place on a lined baking sheet. Once all dates are filled, chill them for 5-10 minutes in the fridge

  3. While the dates are being chilled, add your chocolate chips to a bowl with your coconut oil and microwave to melt the chocolate. Make sure you are stirring after 30 sec increments until chocolate is fully melted.

  4. Dip each stuffed date halfway in chocolate and place back on the baking sheet lined with parchment paper, while the chocolate is still warm sprinkle crushed pistachios and flaky sea salt on top of each date.

  5. Chill dates for 10-15 minutes in the fridge or freezer until the chocolate is set and enjoy!

  6. Store them in an airtight container in the fridge for up to a week


Why these are a favorite:

As someone with eczema who likes to focus on an anti-inflammatory diet, I love that these are a sweet treat I can have without spiking my blood sugar. These are also packed with ingredients that actually support the body.


 I chose to use dates because not only are they delicious but they are high in fiber, antioxidants, and healthy fats.

And you are also getting magnesium from the dark chocolate.


Whether you’re making them for a party, gifting them to a friend, or just treating yourself, these chocolate-covered dates are proof that simple ingredients can create something truly special—no passport to Dubai required!
