If you loved my Chimichurri Chicken Thighs , here's your next obsession: a Chimichurri chicken salad thats bursting with color, protein, and tons of flavor.

Think an easy meal prep that will keep you satiated, tossed with the same bold, herby chimichurri sauce that instantly elevates anything it touches. This chicken salad is anything but boring! It's the kind of meal prep you actually look forward to eating and wont give you the chicken salad ick. And not to mention I use a rotisserie chicken, making this a quick, no-mess, meal!


Ingredients:

  • Rotisserie chicken (my fave is the organic chicken from Whole Foods)

  • My Cilantro Chimichurri

  • S&P to taste


Directions:

  1. Disassemble your rotisserie, I like to dice/shred mine so its not too stringy. Place your shredded chicken into a big mixing bowl.

  2. Pour 1 cup of chimichurri on top of chicken and stir.

  3. Season with S&P to your liking.


*For a creamier version you can also add mayo, I recommend using about 1/2 cup if you are going this route.


This is my take on a more flavorful chicken salad meal prep! This can be served on toasted sourdough, in a wrap, or my personal favorite: a lettuce boat. This salad lasts 4-5 days in the fridge and perfect for weekly lunches and doesn't compromise on flavor.
